The language of the invoice is defined at the billing address level.

1. go to Clients & Brands section

2. click on Client name

3. Scroll down to Billing addresses

4, Use Action button to Edit

In this billing address detail, you can also set default currency, invoice email addresses or if VAT should be applied on invoices.
